That's good news. They should scan it with 4K and release it on Blu ray.
Ok, that won't happen. Why now, and not BEFORE releasing S1? I mean, there is a HUGE difference to see in those few seconds of S1, especially episodes 4 last few seconds and the complete following credits do look awesome and crystal clear.
But better late than never. Maybe they re-do the first two seasons as well due to their strange "on demand" selling plans.

According to the Falcon Crest fan club the 3rd season will not be released in Germany this year and 2013 is just a maybe. Fans who reside in the U.S. are apparently still scheduled for a 2012 release, as a “made on demand”.
Phillip has finally got Angela where he wants. He then provides an engagement ring. Falcon Crest 1984:
Phillip: “Would you accept a little token of my love for you?”
Angela: “Oh Phillip. How sweet!”
Phillip: “Sweet? That’s a perfect 12 carat eyes blue solitaire!”
Angela: “Well that just makes us a perfect 12 carat couple, doesn’t it?”

This is the latest I could find... found it on falconcrest.org and it's from March this year:
March 26, 2012:
The WARNER ARCHIVE COLLECTION informed DFCF Editorial Assistant TOM TAGLIENTE about the current remastering process of season 3:
"[...] The process involved in preparing this series for release is far more complex than most, and therefore requires more time than we would have hoped. LORIMAR did not make any protection elements on most episodes, hence our colleagues have to go back to the original negatives of every episode as they are all being preserved and restored. It is unlikely that there will be any 'news' for quite some time until this work is completed [...] and we think the improvement in quality is worth waiting for.
This is a case where no news is good news. We thank you for your patience and support."
Doesn't sound too bad... 
Meanwhile just throw in the last scene of S1 Ep 4 and watch it and the end credits... and then imagine, how the whole 3rd season will look like, once it's done. Just - WOW!
